Mayo-Free Broccoli Salad

This is a great recipe to make ahead and have on hand for a cookout, potluck, tailgating, or just as a side for a summer night's dinner. It's full of so many different flavors and textures - fresh broccoli, sunflower seeds, dried cranberries, red onion, shredded sharp cheddar cheese, and chopped bacon. It's like a little buffet in one bowl. Your tastebuds are in overdrive just thinking about it.

You'll need about 2 heads of fresh broccoli, washed and dried.  Chop into bite sized pieces and add desired amounts of the following:

  • Sunflower seeds (about 1/4 cup)
  • Dried cranberries (about 1/2 cup)
  • Chopped bacon (about 1/2 cup
  • Chopped red onion (about 1/3 cup)
  • Shredded cheddar cheese (about 1/2 cup)

Lastly, drizzle about 1/2 cup of Adams Apple Co. Cider Slaw Dressing over the mixture and stir well. Refrigerate for about 2 hours before serving so the dressing soaks in.  There's no mayo in our dressing, so there's no need to worry about it going bad like you would with leaving a mayonnaise based dressing out for too long.  This dressing is also perfect for broccoli slaw and pasta salad!
