Pumpkin Bread - 6 Mini Loaves!

 

Pumpkin Bread

 

3 cups sugar

1 cup canola oil

4 eggs, beaten

(1) 16 oz. can pumpkin

 

3 ½ cups all-purpose flour

1 tsp. baking powder

2 tsp. baking soda

2 tsp. salt

½ tsp. ground cloves

1 tsp. cinnamon

1 tsp. nutmeg

1 tsp. allspice

2/3 c. water

1 cup black walnuts (optional)

 

Combine sugar, oil, and eggs. Beat until fluffy.  Stir in pumpkin.  Combine dry ingredients and stir into pumpkin mixture.  Add water and nuts (if desired).  Pour into 2 greased loaf pans (or 4 mini loaf pans).  Bake at 350 degrees for 65-75 minutes.
